Today we wanted to make a cookie with chocolate in it. There were three of these chocolate drop cookie recipes and we chose this one because we had everything we needed on hand, and it reminded us of an old family favorite.
These cookies were really really greasy. As they were cooling they were leaving puddles of oil behind. It was very unappetizing. They tasted great but they never really set up into "cookies".
Overall I'd say this attempt was mediocre. I think the recipe just isn't that good.

Strawberry Meringue Bars
This cookie is actually a bar. It's baked in a 9x13 glass pan. I coincidentally couldn't find my pan anywhere and had to wait another day and borrow one from Nemi's Aunty.

What I loved: I'm glad it was our first recipe because it was very simple. There were three parts, but each section was very easy and had very few ingredients. This crust was absolutely amazing. The recipe says to just put it in the pan, but you have to mash it around with your hands like a pie crust.
What I would change: The coconut was a bit overwhelming to me. I would cut it down, possibly by half. Also the meringue has chopped almonds in it, and has to be spread very thin. I would probably double the meringue next time to make it easier to spread. I also think there were so many textures going on you could probably eliminate the almonds all together. I think you could super simplify this recipe by eliminating either or both of the coconut and almonds.
Daddy said he could eat these cookies all day, that they could easily contribute to an ever expanding waistline.

One day Nemi asked me, "Can we make cookies?"
"What kind of cookies?" I said.
"All of them"
So I thought and said, "We have this awesome book, 1001 Cookie Recipes. Why don't we try to make them all!"
Then I thought, why not start a blog? And when we were halfway through baking the first cookies I thought, why not video it?
So, here we are. Using 1001 Cookie Recipes, by Gregg. R. Gillespie.
Several of the recipes are repeats of the same cookie so we may not make all of the versions, and during the holidays we may cover several at a time! We are going to play it by ear and see where it takes us.
